Meet my friend, Chef Eddy! As you can probably tell, he is full of energy, funny stories, and has a wealth of experience in cooking. Today he is showing us how to make his wonderful Coconut Banana bars. Eddy has made huge strides in his own health by changing to a plant based diet over the past 6 years, and now he is on a quest to help others do the same!
1/4 cup silken tofu
3/4 cup brown sugar
1/4 cup vegan margarine (Earth Balance)
1/2 tablespoon vanilla extract
1 teaspoon maple extract
1 1/2 cup flour
1 1/2 teaspoon baking powder
1 teaspoon salt
1/2 cup shredded coconut
Preheat oven to 350F. Lightly oil a 13″ x 9″ baking dish.
In a food processor, blend tofu, brown sugar, margarine, vanilla, maple extract, and bananas until smooth.
In a separate bowl mix together the flour, baking powder, and salt.
Now mix together the wet and the dry mixture. Be careful not to over mix.
Fold in the shredded coconut and pour into the prepared baking pan.
Bake for 25-30 minutes, until a toothpick comes out dry. Remove the baking dish from the oven and let cool for 15 minutes before cutting. Cut into bars and sprinkle with powder sugar.
