Kale Chips

This is probably my favorite way to eat kale and it is super easy to make.  I always make several batches, as I want some left over for another day, but I rarely have any to save.   This is a much healthier snack than store bought chips, and so much better for you.

Ingredients:

1 bunch of Kale

1-2 tablespoons olive oil

1 small garlic clove, minced

salt to taste

 

Instructions:

Preheat oven to 300 degrees

Prep the kale by washing it.  Next strip the leaves off the stem.  Dry the kale in a salad spinner to remove as much of the moisture as possible.  In a small bowl mix together the olive oil, minced garlic, and a pinch of salt.  Let sit for a few minutes for the flavors to combine.  Pour over the kale and mix until all the kale leaves are coated.  Spread the kale on a baking sheet, single layer.  Bake until crispy, 25-30 minutes.  Let cool for a few minutes and salt to taste.
