Fresh Kale Salad
Kale is one of the world’s most nutritious vegetables and this is my favorite way to eat it raw. Watch the video for a few tips on how to make this salad even better.
1/4 cup olive oil
2 tablespoons fresh lemon juice
1/2 teaspoon agave
2 large garlic cloves, minced
3 tablespoons finely chopped red onion
3/4 teaspoon salt
1/4 teaspoon thyme
1 tablespoon nutritional yeast (optional)
1 bunch of fresh kale
In a jar, add the olive oil, lemon juice, agave, minced garlic, red onion, salt, nutritional yeast, and thyme. Secure the lid and then shake until the salad dressing is mixed. Store in fridge for a few minutes (15-20 min) to let the onions soften if time allows. Remove the kale leaves from the stems and wash the leaves. Dry the kale and tear into medium size pieces. Pour the dressing over the kale and massage the kale with your hands until the leaves have softened. Cut radishes into small pieces and add to salad.
