- 1 ripe Banana
- 1/2–3/4 cup quick oats
- 1/4 teaspoon salt
- 3/4 teaspoon baking powder
- 2 tablespoons maple syrup or agave
- 1/2 teaspoon vanilla
- 2 tablespoons coconut oil
Instructions
- Preheat the oven to 350°F and line a baking sheet.
- In a mixing bowl, add all the wet ingredients: banana, maple syrup, vanilla, and coconut oil. Mash the banana with a fork and stir to combine.
- In a separate mixing bowl, combine the dry ingredients: quick oats, salt, and baking powder.
- Combine the wet and dry ingredients and stir to combine. Let the mixture sit for 5 minutes, allowing the flavors to meld together and the consistency to thicken.
- Drop cookies by spoon onto a lined baking sheet, spread out the top, and bake at 350°F for 12-13 minutes.
