Description

Soft and naturally sweet, these banana oat cookies are a wholesome treat made with banana and oats. They are a healthier way to satisfy your sweet tooth making it perfect for breakfast, snacks, or dessert.


Ingredients

  • 1 ripe Banana
  • 1/23/4 cup quick oats
  • 1/4 teaspoon salt
  • 3/4 teaspoon baking powder
  • 2 tablespoons maple syrup or agave
  • 1/2 teaspoon vanilla
  • 2 tablespoons coconut oil

Instructions

  1. Preheat the oven to 350°F and line a baking sheet.
  2. In a mixing bowl, add all the wet ingredients: banana, maple syrup, vanilla, and coconut oil. Mash the banana with a fork and stir to combine.
  3. In a separate mixing bowl, combine the dry ingredients: quick oats, salt, and baking powder.
  4. Combine the wet and dry ingredients and stir to combine. Let the mixture sit for 5 minutes, allowing the flavors to meld together and the consistency to thicken.
  5. Drop cookies by spoon onto a lined baking sheet, spread out the top, and bake at 350°F for 12-13 minutes.
