These energy balls are a simple and delicious snack that are perfect for busy days when you need a quick boost of energy.
Ingredients

- 1/2 cup dried apricots (95g)
- 1/4 cup cashews (38g)
- 3 tablespoons old fashioned oats (24g)
- 3/4 cup shredded coconut (37g)
- 1 tablespoon chia seeds (10g)
- pinch of salt
- 1 tablespoons maple syrup (25g)
- 1 tablespoon coconut milk (16g)
- 1/2 teaspoon vanila extract
Instructions
- In a food processor add the dried apricots and blend into a rough paste.
- Next add cashews and oats to the food processor and blend until a crumble consistency.
- Add the shredded coconut, chia seeds, and pinch of salt to the food processor and blend until a rough dry mixture has formed.
- Next add the maple syrup, coconut milk, and vanilla extract. Blend everything together for 1-2 minutes until a sticky dough has formed.
- Roll the dough into small bite size balls and chill in the freezer or fridge for 20-30 minutes.
- Store them in a plastic container and take along for your next adventure.
Notes
You can dip the finished balls in melted carob for an extra touch. I add a little melted coconut oil to melted carob to make it a dipping consistency. Put them on a piece of parchment paper and chill in the freeze until the carob sets. Store in a travel container.
