Description

This one-pot Norwegian Lentil Stew will warm you up from the inside out. This stew is the perfect mid-week meal, bursting with wholesome veggies and super simple to make.


Ingredients

Scale
  • 1 cup lentils
  • 34 oz. of water (1 liter)
  • 1/2 teaspoon salt
  • 23 carrots, sliced
  • 4 potatoes, diced
  • 1 large onion
  • 1/2 cup leek, sliced
  • 2 1/2 tablespoons Better-Than-Bouillon

Instructions

  1. In a saucepan add water and salt. Bring to a boil. Wash lentils, add to pot.
  2. Reduce heat, let simmer for 35 min. with the lid on.
  3. Add the rest of the ingredients. Let simmer for another 25 min. with the lid on.
  4. Serve with caramelized onions, cranberry sauce, and flat bread as the Norwegians do, or eat it as is.
