Description

This Red Lentil Sweet Potato Soup is a hearty, feel-good meal packed with protein, fiber, and warming spices. It’s smooth, comforting, and perfect for chilly days.


Ingredients

Scale
  • 12 tablespoons olive oil
  • 1 large onion, petite dice
  • 45 fresh garlic cloves, minced
  • 1/21 teaspoon fresh grated ginger
  • 2 cups sweet potato, petite diced
  • 1 1/2 cups red lentils
  • 4 cups vegetable stock
  • 2 cups water
  • 1 teaspoon salt
  • 1/4 teaspoon turmeric
  • 1/8 teaspoon crushed red pepper flakes
  • 13.515 oz. can of coconut milk
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon Better-than-Boullion (Vegetable Base)
  • 12 cup fresh kale, finely chopped

Instructions

  1. In a saucepan, heat olive oil over medium-high heat. Sauté the onion and sauté until soft.
  2. Next, add fresh garlic, ginger, turmeric, crushed red pepper, and salt. Stir and cook until fragrant.
  3. Add sweet potatoes, red lentils, broth, water, and Better-than-Bouillon. Bring to a boil, then lower the heat and simmer with a lid for 15-20 minutes,
  4. Stir in coconut milk, kale, and lemon juice. Serve and enjoy!
