This Red Lentil Sweet Potato Soup is a hearty, feel-good meal packed with protein, fiber, and warming spices. It’s smooth, comforting, and perfect for chilly days.

- 1–2 tablespoons olive oil
- 1 large onion, petite dice
- 4–5 fresh garlic cloves, minced
- 1/2–1 teaspoon fresh grated ginger
- 2 cups sweet potato, petite diced
- 1 1/2 cups red lentils
- 4 cups vegetable stock
- 2 cups water
- 1 teaspoon salt
- 1/4 teaspoon turmeric
- 1/8 teaspoon crushed red pepper flakes
- 13.5–15 oz. can of coconut milk
- 1 tablespoon fresh lemon juice
- 1 tablespoon Better-than-Boullion (Vegetable Base)
- 1–2 cup fresh kale, finely chopped
Instructions
- In a saucepan, heat olive oil over medium-high heat. Sauté the onion and sauté until soft.
- Next, add fresh garlic, ginger, turmeric, crushed red pepper, and salt. Stir and cook until fragrant.
- Add sweet potatoes, red lentils, broth, water, and Better-than-Bouillon. Bring to a boil, then lower the heat and simmer with a lid for 15-20 minutes,
- Stir in coconut milk, kale, and lemon juice. Serve and enjoy!
