Description

This roasted delicata squash is caramelized to perfection with a touch of maple syrup and finished with fresh pomegranate seeds make it as beautiful as it is delicious.


Ingredients

Scale
  • 23 delicata squash
  • 2 tbsp olive oil
  • 2 tsp maple syrup
  • Sea salt, to taste

Garnish:

  • 1/4 cup toasted pecans
  • 1/2 cup fresh pomegranate seeds
  • 2 teaspoons fresh thyme leaves (optional)

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Wash the delicata squash, slice it in half lengthwise, and scoop out the seeds. (You do not need to peel the squash)
  3. Cut into ¼-inch half-moon slices.
  4. In a large bowl, toss the squash with olive oil, maple syrup, and salt until evenly coated.
  5. Spread in a single layer on the baking sheet and roast for 30–40 minutes, or until tender and golden.
  6. Garnish with toasted pecans, pomegranate seeds, and fresh thyme before serving.
