Description
This roasted delicata squash is caramelized to perfection with a touch of maple syrup and finished with fresh pomegranate seeds make it as beautiful as it is delicious.
Ingredients

- 2–3 delicata squash
- 2 tbsp olive oil
- 2 tsp maple syrup
- Sea salt, to taste
Garnish:
- 1/4 cup toasted pecans
- 1/2 cup fresh pomegranate seeds
- 2 teaspoons fresh thyme leaves (optional)
Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Wash the delicata squash, slice it in half lengthwise, and scoop out the seeds. (You do not need to peel the squash)
- Cut into ¼-inch half-moon slices.
- In a large bowl, toss the squash with olive oil, maple syrup, and salt until evenly coated.
- Spread in a single layer on the baking sheet and roast for 30–40 minutes, or until tender and golden.
- Garnish with toasted pecans, pomegranate seeds, and fresh thyme before serving.
