Vegan Shiitake Bacon Recipe

Ingredients

  • 2 cups shiitake mushrooms
  • 2 tablespoons olive oil (more if needed)
  • salt to taste (1/4-1/2 teaspoon)

Instructions

  1. Preheat oven to 375 F
  2. Wash the shiitake mushrooms and cut off and discard the stems.
  3. Toss mushrooms with olive oil and salt. Spread the mushrooms out in a single layer on a silicon mat.
  4. Bake for 20-25 minutes, stirring every 10 minutes or so.
