Ingredients

- 2 cups shiitake mushrooms
- 2 tablespoons olive oil (more if needed)
- salt to taste (1/4-1/2 teaspoon)
Instructions
- Preheat oven to 375 F
- Wash the shiitake mushrooms and cut off and discard the stems.
- Toss mushrooms with olive oil and salt. Spread the mushrooms out in a single layer on a silicon mat.
- Bake for 20-25 minutes, stirring every 10 minutes or so.
