I am so excited about this Vegan Sweet Potato with Marshmallow recipe. I mean, how can you go wrong with sweet potatoes topped with Marshmallows? It is a Holiday side dish in our house, tasting more like a dessert than a potato dish, but oh so wonderful.
Peel and slice sweet potatoes. Add to a medium saucepan, cover with water (2 1/2 cups), add 3/4 teaspoon salt, and bring to a boil.
Reduce heat, cover with lid, and let simmer for 15 minutes until tender.
Mash the potatoes. Add vegan margarine, vanilla, cinnamon, ginger, a pinch of salt (optional), maple syrup, and orange juice concentrate. Stir to combine.
Add to a baking dish (8 x 8 in). Top with chopped pecans (optional) and cover with vegan marshmallows ( Dandies).
Bake at 350 for 20-25 minutes until marshmallows are golden brown.
Dandies can be bought at amazon.com, Whole Foods, or directly from the Dandies website. They come in two different sizes, regular or mini, and either one will work.
If making this dish ahead of time, prepare as above, but before baking, cover and store in fridge until ready to serve. Bake per instruction above.
