Try this delicious roasted delicata squash recipe stuffed with a flavorful blend of bread, onion, garlic, celery, pecans, and fresh herbs. It’s quick and easy to make plus it’s perfect for fall!
Ingredients

- 1 Delicate Squash
- Olive oil
- Salt
- Stuffing (recipe below)
Homemade Stuffing
- 3 Slices of Bread
- 1 small onion
- 1 clove garlic
- 1 stalk celery
- 1 cup water
- 2 teaspoons Better Than Bouillon
- 1/4 cup pecans
- 2 teaspoons fresh sage
- 1/2 teaspoon dried thyme
- 2 teaspoons fresh parsley, minced
- 1/2 teaspoon salt (add as needed)
Instructions
- Preheat oven to 400 F.
- Wash the Delicate Squash carefully and cut into 1/2 in slices.
- Place on greased baking sheet and brush with olive oil.
- Sprinkle with salt and bake for 20 minutes.
- Remove from oven and fill with stuffing. Return to oven for another 10 minutes.
Homemade Stuffing
- Cut the bread into small cubes. Toast bread in oven at 300 F for 15 minutes.
- In a sauce pan, sauté onions in a little olive oil until soft, then add garlic, and celery. Sauté for a few minutes.
- Next add water, Better Than Bouillon, pecans, sage, thyme, and salt. Bring to a boil.
- Remove from stove top. Add dried bread and fresh parsley. Toss gently.
