Delicata Squash is a wonderful squash, first and foremost because it tastes great, but also because the skin is tender enough that you can actually eat it. It is simple and easy to prepare, and can definitely stand on its own, but to make this dish special for the upcoming Holidays, we added some stuffing and served it with cranberry sauce. It was fantabulous.
Preparing the Squash:
1 Delicate Squash
Olive oil
Salt
Stuffing (recipe below)
Preheat oven to 400 F
Wash the Delicate Squash carefully
Cut into 1/2 in slices
Place on greased baking sheet Brush with Olive oil
Sprinkle with Salt
Bake for 20 min.
Remove from oven
Fill with Stuffing
Return to oven for another 10 min.
Homemade Stuffing 3 Slices of Bread
1 small onion
1 clove garlic
1 stalk celery
1 cup water
2 teaspoons Better Than Bouillon
1/4 cup pecans
2 teaspoons fresh sage
1/2 teaspoon dried thyme
2 teaspoons fresh parsley, minced
1/2 teaspoon salt (add as needed)
Cut the bread into small cubes
Toast bread in oven at 300 for 15 min.
In a sauce pan, sauté onions in a little olive oil until soft, then add garlic, and celery.
Sauté for a few minutes.
Next add water, Better Than Bouillon, pecans, sage, thyme, and salt.
Bring to a boil.
Remove from stove top.
Add dried bread and fresh parsley. Toss gently.

I tried this stuffing when I made the vegan loaf….we were so delighted. This stuffing is excellent. I did add some mushrooms and some chestnuts. I will make this again.
