Corn and Zucchini Summer Skillet

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1/2 cup onion, chopped
  • 2 garlic cloves, minced
  • 1 zucchini, chopped
  • 3 ears of corn on the cob
  • 1 1/2 cup cherry tomatoes, cut in half
  • 1/4 cup basil, chopped
  • Salt to taste

Instructions

  1. In a large pot sauté onion until soft (2-3 minutes), add the minced garlic and cook for 1 minute.
  2. Next add the zucchini and cook for a couple of minutes.  Then add the corn and cook for another 2-3 minutes.
  3. Add the cherry tomatoes and cook until they begin to soften.
  4. Turn off the heat and stir in Basil.  Seasoning with salt and enjoy!
