Ingredients

- 1 tablespoon olive oil
- 1/2 cup onion, chopped
- 2 garlic cloves, minced
- 1 zucchini, chopped
- 3 ears of corn on the cob
- 1 1/2 cup cherry tomatoes, cut in half
- 1/4 cup basil, chopped
- Salt to taste
Instructions
- In a large pot sauté onion until soft (2-3 minutes), add the minced garlic and cook for 1 minute.
- Next add the zucchini and cook for a couple of minutes. Then add the corn and cook for another 2-3 minutes.
- Add the cherry tomatoes and cook until they begin to soften.
- Turn off the heat and stir in Basil. Seasoning with salt and enjoy!
