Wet Ingredients:
- 1 1/4 cup water
- 1 cup onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon olive oil
- 1/2 cup cannellini beans
- 2 tablespoons Bragg Liquid Aminos
- 1 teaspoon paprika
- 1/2 teaspoon oregano, dried
- 1/2 teaspoon rosemary, dried
- 1/8 teaspoon crushed red pepper
- 1 teaspoon salt
- 1/4 teaspoon smoke powder (optional)
- 1/4 teaspoon fennel, ground
Dry Ingredients:
- 2 cups vital wheat gluten flour
- 1/3 cup oat flour
- 2 tablespoons nutritional yeast
- 3 tablespoons dried mushrooms, ground
Broth:
- 8 cups water
- 1/4 cup Bragg Liquid Aminos (soy sauce)
- 1 bay leaf (optional)
- sprig of fresh rosemary (optional)
- sprig of fresh oregano (optional)
Instructions
- Sauté onion until soft, add garlic and cook for a minute.
- In a blender, combine the wet ingredients including the sautéed onion and garlic. Blend until smooth and set aside.
- In a large mixing bowl, combine the dry ingredients.
- Next, combine wet and dry ingredients. Stir until it forms a dough. Knead dough for about 5 minutes.
- Prepare broth and bring to a boil.
- In the mean time cut out burgers with a cutter.
- Add one burger at a time to the broth. Let it boil for about 1 minute, stirring to make sure they do not stick to the bottom of the pan.
- Lower heat to a simmer. Simmer for about 45 min. Let cool in broth.
