These finger-licking potato wedges are full of vegan cheesy goodness and can be whipped up in a jiffy.
Ingredients

Potato Wedges:
- 4–5 medium sized potatoes
- 2 tablespoons oil
- 3/4 teaspoon salt
- 1/3 cup vegan parmesan (Click Here for Recipe)
Instructions
- Preheat oven to 400F and prepare a baking sheet (either with a silicone mat, or oil)
- Wash potatoes, cut into wedges
- Add potatoes to a bowl, add oil, stir to coat . Next add the salt and about half of the parmesan cheese, stir to coat .
- Place on baking sheet, sprinkle the rest of the parmesan cheese on the potato wedges.
- Bake at 400F for about 25-30 min.
Avocado Dip:
- 1 medium size ripe avocado
- juice from 1/2 lime
- 1 garlic clove crushed
- 1/8 teaspoon red pepper flakes
- 3/4 teaspoon salt (salt to taste)
- In a food processor add all ingredients and blend.
- Add salt to taste. Salt is crucial to the success of this dip.
- Serve immediately with warm potato wedges.
