Ingredients and substitution notes

Here’s what you need to know about the ingredients you’ll need to gather:

  • Potatoes: Use starchy potatoes like Russet or Yukon gold for best results. Slice them into wedges or any desired shape.
  • Oil: Olive oil or any other vegetable oil can be used.
  • Salt: Use coarse salt for best results. Kosher salt or sea salt works well.
  • Vegan parmesan: Use store-bought vegan parmesan or make my recipe.
  • Avocado: Choose ripe avocados for the creamy dip. They should be soft to the touch and give slightly when squeezed.
  • Lime juice: Freshly squeezed lime juice adds a tangy flavor to the creamy avocado dip.
  • Garlic: Use fresh garlic cloves for best results. You can adjust the amount of garlic based on your preference.
  • Red pepper flakes: This adds a touch of heat and can be adjusted to your desired level of spiciness.

Recipe variations and add-ins

Wondering what to add to your recipe? Here are my ideas:

  • Herb-infused oil: Instead of plain oil, infuse it with herbs like rosemary, thyme, or oregano to add extra flavor to the potatoes.
  • Smoked paprika: Add a smoky flavor to the potatoes by using smoked paprika in place of regular paprika.
  • Vegan sour cream: Serve these potato wedges with vegan sour cream for a tangy twist.
  • Jalapeño peppers: Add chopped jalapeño peppers to the avocado dip for a spicy kick.
  • Roasted garlic: Instead of using raw garlic, roast it for a sweeter and milder flavor.
  • Fresh herbs: Mix chopped fresh herbs like cilantro, parsley, or basil into the avocado dip for added freshness.
  • Vegan bacon bits: Sprinkle vegan bacon bits over the finished potato wedges for a smoky and savory crunch.
  • Nutritional yeast: Add a sprinkle of nutritional yeast over the finished dish for a cheesy flavor.
  • Pesto dip: Mix pesto with the avocado dip for a herby and garlicky twist.

Top tips

Checkout my tips to the perfect wedges:

  • Choose the right potatoes: Look for potatoes that are suitable for baking, such as russet or Yukon gold. They should be firm, smooth, and free of bruises or blemishes. Avoid using waxy potatoes like red or fingerling, as they won’t get as crispy.
  • Cut the potatoes evenly: It’s important to cut the potatoes into evenly sized wedges so that they cook at the same rate. Aim for wedges that are about 1/2 inch thick and 3-4 inches long.
  • Preheat the oven: Make sure your oven is preheated to 425°F before baking the potato wedges. This will help them cook evenly and become crispy.
  • Use parchment paper: Line your baking sheet with parchment paper to prevent the potato wedges from sticking and to make clean-up easier.
  • Season generously: Don’t be afraid to season the potato wedges generously with salt and any other spices or herbs you like. This will give them great flavor and make them more appetizing.

Make ahead of instructions and storage

  • Cut the potatoes in advance: You can cut the potatoes into wedges a few hours before cooking and store them in a bowl of cold water in the refrigerator. Drain them well and pat them dry before seasoning and baking.
  • Freeze for later: If you want to make a large batch of potato wedges, you can freeze them after baking. Allow them to cool completely, then transfer them to a freezer-safe container or bag and store in the freezer for up to 2 months. To reheat, bake them in the oven at 425°F for 10-15 minutes, or until crispy.
  • Avocado dip: You can make the avocado dip in advance and store it in an airtight container in the refrigerator for up to 2 days. To prevent the dip from turning brown, cover it with plastic wrap and press it directly onto the surface of the dip.

Serving suggestions

  • Classic style: Serve the potato wedges hot with a sprinkle of vegan parmesan cheese, chopped fresh parsley, and a side of creamy avocado dip.
  • Spicy twist: Add a kick of heat to the potato wedges by seasoning them with cayenne pepper, chili powder, or smoked paprika before baking. Serve with a side of creamy avocado dip mixed with some hot sauce or salsa.
  • Mediterranean flavors: Sprinkle the potato wedges with some dried oregano, garlic powder, and sea salt before baking. Serve with a side of creamy avocado dip mixed with some lemon juice, chopped fresh parsley, and diced tomatoes.
  • Breakfast idea: Serve the potato wedges as a side dish for breakfast, topped with some vegan scrambled tofu, diced avocado, and a drizzle of hot sauce.
  • Family-style serving: Place the potato wedges on a large platter, sprinkle with vegan parmesan cheese and fresh herbs, and serve the creamy avocado dip in a bowl on the side. This makes for a great appetizer or snack to share with family and friends.

Can I use a different type of potato for this recipe?

While Russet or Yukon Gold potatoes are recommended for baking, you can use other types of potatoes if that’s what you have on hand.

Keep in mind that waxy potatoes like red or fingerling won’t get as crispy as baking potatoes, so adjust your cooking time accordingly.

Can I make the avocado dipping sauce ahead of time?

Yes, you can make the avocado dipping sauce up to 2 days in advance and store it in an airtight container in the refrigerator.

To prevent browning, cover the dip with plastic wrap and press it down onto the surface of the dip before storing. Give the dip a good stir before serving, and adjust the seasoning if needed.
