Vegan Parmesan Potato Wedges with A Creamy Avocado Dip

When you think of comfort food, potato wedges may come to mind, or at least it does for me, and here is a healthier alternative of this favorite. I love these vegan parmesan potato wedges, and I often serve them with a simple avocado dip. It is a great choice to serve family and friends for any occasion.

Potato Wedges:
4-5 medium sized potatoes
2 tablespoons oil
3/4 teaspoon salt
1/3 cup vegan parmesan (Click Here for Recipe)

Preheat oven to 400F
Prepare a baking sheet (either with a silicone mat, or oil)
Wash potatoes, cut into wedges
Add potatoes to a bowl, add oil, stir to coat
Add salt
Add about half of the parmesan cheese, stir to coat
Place on baking sheet, sprinkle the rest of the parmesan cheese on the potato wedges.
Bake at 400F for about 25-30 min.

Avocado dip:
1 medium size ripe avocado
juice from 1/2 lime
1 garlic clove crushed
1/8 teaspoon red pepper flakes
3/4 teaspoon salt (salt to taste)

In a food processor add all ingredients and blend.  Add salt to taste.  Salt is crucial to the success of this dip.

Serve immediately with warm potato wedges.
