Ingredients

Potato Wedges:

  • 45 medium sized potatoes
  • 
2 tablespoons oil
  • 3/4 teaspoon salt
  • 1/3 cup vegan parmesan (Click Here for Recipe)

Instructions

  1. Preheat oven to 400F
 and prepare a baking sheet (either with a silicone mat, or oil)
  2. Wash potatoes, cut into wedges
  3. Add potatoes to a bowl, add oil, stir to coat
.  Next add the salt
 and about half of the parmesan cheese, stir to coat
.
  4. Place on baking sheet, sprinkle the rest of the parmesan cheese on the potato wedges.
  5. Bake at 400F for about 25-30 min.

Avocado Dip: 

  • 1 medium size ripe avocado
  • juice from 1/2 lime
  • 1 garlic clove crushed
  • 1/8 teaspoon red pepper flakes
  • 3/4 teaspoon salt (salt to taste)
  1. In a food processor add all ingredients and blend.
  2. Add salt to taste.  Salt is crucial to the success of this dip.
  3. Serve immediately with warm potato wedges.
