- 2 cups vital wheat gluten

- 1 1/2 teaspoon hickory smoke powder
- 1 teaspoon salt
- 1 teaspoon onion powder
- 2 tablespoons dried mushroom powder (ground dried mushrooms)
Wet Ingredients:
- 3/4 cup water
- 1/4 cup olive oil
- 1/4 cup Braggs Liquid Aminos
- 3 tablespoons maple syrup
- 1 1/2 tablespoon tomato paste
Glaze:
- 1 tablespoon maple
- 1 tablespoon oil
- 1 teaspoon salt
- 1 1/2 teaspoon grains of paradise (black pepper substitute)
- 1 teaspoon hickory smoke powder
Instructions
In a medium bowl, add all dry ingredients. Stir to combine.
In a separate jar, add all wet ingredients. Stir to combine.
Add the wet ingredients to the dry ingredients and stir.
Knead until a dough forms. If the dough seems too loose, add an additional tablespoon of vital wheat gluten.
Divide into 4 pieces. Form into logs.
Make the glaze by adding all ingredients in a small bowl. Stir to combine.

My rolls are in the oven baking , I omitted the salt in the dry ingredients and added a pinch in the glaze , I tasted the mixture it was perfect without the added salt , your recipe is accurate very yummy I didn’t have the smoked mushroom in the glaze I added some powder shiitake to make it thicker , If I would have added all the salt listed it would have made it almost inedible too salty . You can add salt when you grill it but you can’t remove it . You mentioned you can omit it but when you never made a recipe you are afraid that it won’t be tasty as is , if anyone makes this recipe omit the salt it’s not necessary, I can’t wait to take it out and slice it , I will let you know how it tuned out . My rolls have been out for an hour , I was to in a hurry to wait , the texture is unbelievable! I need to find the smoke powder for the glaze , my Shiitake powder might have given a tiny bit of bitterness not much . By omitting the salt they turned out perfect, they don’t need the extra salt just a pinch in the glaze . They aren’t tough or hard almost like a baloney texture 😀😀 this is when I used to eat that hahah .
