This amazing Vegan Caesar Salad tastes as fresh and delicious as it looks. It is a perfect summer salad with crispy lettuce, homemade croutons, and a creamy, flavorful salad dressing.
Ingredients

- 2 Romaine lettuce heads
- 1/4 cup silken tofu
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon horseradish
- 1 1/2 tablespoon capers
- 1/4 teaspoon salt
- 1 teaspoon Braggs Liquid Aminos or soy sauce
- 1 garlic clove
- 1 1/2 tablespoons nutritional yeast flakes
- 1/4 cup olive oil
- homemade garlic croutons
- optional: vegan parmesan
Instructions
- Add the tofu, lemon juice, horseradish capers, salt, Bragg Liquid Aminos, garlic, and nutritional yeast to a blender. Blend until smooth.
- Next, slowly add the oil while the blender is running on low.
- Keep in the fridge until ready to serve.
- Rinse and dry the romaine lettuce leaves. Chop into bite-size pieces.
- Toss the romaine lettuce with the Caesar dressing. Top with garlic croutons and vegan parmesan.
Notes
- The inner leaves of the romaine lettuce are crispier and, therefore, better in this salad.
- Double the salad dressing for larger salads.
