I love these crunchy tofu bites! It is one of my absolute favorite toppings for stir fry or salad. They can stand alone as a healthy snack, in fact, I can make a whole meal out of these. They are super easy to make, and so absolutely delicious.
Ingredients:
14 oz. organic Tofu (extra firm)
1 tablespoon sesame oil
1 tablespoon Braggs (soy sauce)
1/2 teaspoon agave nectar
1/2 cup Panko breadcrumbs
Instructions:
Drain tofu. Squeeze or press out as much liquid as possible, without compromising the shape. Cut into bite size pieces and place in a small container with a lid. In a separate small bowl, mix together the oil, Braggs, and agave nectar. Pour over the tofu pieces, put lid on container, and shake until all pieces are evenly coated. (Being careful not to compromise the shape of the tofu bites.) Coat the pieces in Panko breadcrumbs, place on baking sheet. Bake at 450 F for 25-30 min.
Note: For this recipe I really prefer the water packed tofu that you find in the refrigerated section of your grocery store. Do not use the cubed tofu, as it has a different consistency and does not absorb the flavor as well. If you prefer stronger flavor, just double the marinade.

They ARE tasty little morsels. Needed just a bit of salt in my bread crumbs. Thanks so much for the recipe.
