Ingredients

Scale
  • 1 Delicate Squash
  • Olive oil
  • Salt
  • Stuffing (recipe below)

Homemade Stuffing

  • 3 Slices of Bread
  • 1 small onion
  • 1 clove garlic
  • 1 stalk celery
  • 1 cup water
  • 2 teaspoons Better Than Bouillon
  • 1/4 cup pecans
  • 2 teaspoons fresh sage
  • 1/2 teaspoon dried thyme
  • 2 teaspoons fresh parsley, minced
  • 1/2 teaspoon salt (add as needed)

Instructions

  1. Preheat oven to 400 F.
  2. Wash the Delicate Squash carefully and cut into 1/2 in slices.
  3. Place on greased baking sheet and brush with olive oil.
  4. Sprinkle with salt
and bake for 20 minutes.
  5. Remove from oven
and fill with stuffing.
Return to oven for another 10 minutes.

Homemade Stuffing

  1. Cut the bread into small cubes. Toast bread in oven at 300 F for 15 minutes.
  2. In a sauce pan, sauté onions in a little olive oil until soft, then add garlic, and celery. Sauté for a few minutes.
  3. Next add water, Better Than Bouillon, pecans, sage, thyme, and salt.
Bring to a boil.
  4. Remove from stove top.
Add dried bread and fresh parsley. Toss gently.
