Hummus Three Ways

I love hummus!  Store bought hummus cannot compare to a homemade version, and it is so simple to make, give it a try, you might like it too!

Classic Hummus:

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup olive oil (or water if you don’t want to use oil)

2 tablespoons fresh lemon juice

1/2 tablespoon tahini

1 1/2 cloves of garlic

1 teaspoon ground cumin

2 tablespoons water

1/4 teaspoon salt

Directions:   Put all in ingredients in a food processor and blend until smooth.  Enjoy!

Pesto Hummus

  1. Follow recipe above for Classic Hummus.
  2.  Add the following ingredients

3/4-1 cup fresh basil leaves, packed

1/8 cup fresh spinach, packed

1/8 teaspoon salt (optional)

1/2 teaspoon nutritional yeast flakes

1 teaspoon pine nuts

Directions: Blend in a food processor till smooth.

Beet Hummus

  1. Follow recipe above for Classic Hummus
  2. Add the following ingredients

1 garlic clove

1 tablespoon lemon juice

1/4 teaspoon salt

3-4 tablespoons mashed roasted beets (or until you reach desired pink color)

Instructions for roasting beets:

  1. Peel and dice 2 medium sized beets
  2. Sprinkle with olive oil and salt
  3. Roast in preheated oven at 350 for about 50-60 minutes
  4. Let the beets cool to room temperature before adding them to your hummus

Directions:   Blend in a food processor till smooth.

Tried your hummus recipe tonight and it was wonderful!!! First time I’ve ever made hummus and it was so much better than the store bought and not hard to make at all. Keep the videos coming, you are a joy to watch!
