Ingredients and substitution notes

  • Vegan milk: Any non-dairy milk can be used as a substitute for cow’s milk in this recipe. Soy milk, oat milk, and coconut milk are all good options. Almond milk is a great choice as it has a mild, slightly sweet flavor that works well in waffles.
  • Fresh lemon juice: This is used in the recipe to curdle the milk and create a buttermilk-like consistency.
  • All-purpose flour: This is the base flour used in the recipe. If you prefer a lighter, fluffier texture, you can use cake flour instead.
  • Spelt flour: Spelt flour adds a nutty, earthy flavor to the waffles. If you don’t have spelt flour, you can use whole white wheat flour or a gluten-free flour blend.
  • Baking powder: This is what gives the waffles their lift and fluffiness. Be sure to use fresh baking powder for best results.
  • Salt: Adds flavor to the waffles. Use a fine grain salt for best results.
  • Cardamom (optional): Adds a subtle spice flavor to these fluffy vegan waffles. If you don’t have cardamom, you can omit it or substitute with cinnamon.
  • Aquafaba liquid: This is the liquid from a can of chickpeas. It works as an egg replacer in the recipe and helps to create a light, fluffy texture.
  • Organic cane sugar: Adds sweetness to the waffles. If you prefer, you can use maple syrup or agave nectar instead.
  • Vanilla: Adds flavor to the waffles. You can use vanilla extract or vanilla bean paste.

Recipe variations and add-ins

  • Carob or Chocolate chip waffles: Add 1/2 cup of vegan carob or chocolate chips to the batter for a decadent treat. You can also drizzle melted chocolate over the finished fluffy vegan waffles for extra indulgence.
  • Blueberry waffles: Fold 1 cup of fresh or frozen blueberries into the batter for a burst of fruity flavor.
  • Pumpkin spice waffles: Add 1/4 cup of canned pumpkin puree and 1 teaspoon of pumpkin pie spice to the batter for a cozy fall flavor.
  • Banana nut waffles: Mash 2 ripe bananas and fold them into the batter, along with 1/2 cup of chopped nuts like walnuts or pecans.
  • Lemon poppy seed waffles: Add 1 tablespoon of poppy seeds and 1 tablespoon of fresh lemon zest to the batter for a zesty twist.
  • Apple cinnamon waffles: Add 1 cup of grated apples and 1 teaspoon of ground cinnamon to the batter for a delicious fall-inspired flavor.
  • Savory waffles: Omit the sugar and add 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, and 1/4 cup of chopped fresh herbs (like parsley or chives) to the batter. Serve with vegan butter and a drizzle of maple syrup or a savory sauce.
  • Protein-packed waffles: Add 1 scoop of your favorite vegan protein powder to the batter for a boost of protein.

Top tips for making fluffy vegan waffles

  1. Don’t overmix the batter: Overmixing the batter can lead to tough and dense waffles. Mix the batter just until the ingredients are combined, and don’t worry if there are a few lumps.
  2. Use a hot waffle iron: Make sure your waffle iron is hot before adding the batter. This will help the fluffy vegan waffles cook evenly and get crispy on the outside.
  3. Don’t open the waffle iron too soon: Resist the urge to peek at the waffles before they’re fully cooked. Opening the waffle iron too soon can cause the waffles to stick and become misshapen.
  4. Don’t overfill the waffle iron: Be careful not to overfill the waffle iron with batter. Too much batter can cause the waffles to overflow and make a mess.
  5. Use a non-stick waffle iron or spray with cooking spray: Make sure your waffle iron is non-stick, or spray it with cooking spray before adding the batter. This will help the waffles release easily and prevent them from sticking.
  6. Keep the waffles warm: If you’re making a large batch of waffles, keep them warm in a low oven (around 200°F) until you’re ready to serve.

Make ahead of instructions and storage

Freeze for later: You can freeze cooked waffles for later. Let the waffles cool completely, then wrap them individually in plastic wrap or aluminum foil and place them in a freezer-safe bag or container. The waffles will keep in the freezer for up to 3 months.

Reheat in the toaster: To reheat frozen waffles, simply pop them in the toaster or toaster oven until they’re crispy and heated through. You can also reheat them in the oven at 350°F for 5-7 minutes, or in the microwave for 30-60 seconds.

Store in the fridge: If you have leftover cooked fluffy vegan waffles, you can store them in the fridge for up to 3 days. Place them in an airtight container or resealable bag and keep them in the fridge until you’re ready to reheat and serve.

Refresh in the oven: To refresh refrigerated waffles, preheat your oven to 350°F and place the waffles on a baking sheet. Bake for 5-7 minutes or until they’re heated through and crispy.

Serving and topping suggestions

  • Fresh fruit: Top your fluffy vegan waffles with fresh berries, sliced bananas, or other seasonal fruit for a burst of flavor and color.
  • Vegan whipped cream: Whip up some coconut cream or aquafaba to make a delicious vegan whipped cream to top your waffles.
  • Nut butter: Spread some almond butter, peanut butter, or other nut butter on your waffles for a rich and nutty flavor.
  • Maple syrup: Drizzle some pure maple syrup over your waffles for a classic and sweet topping.
  • Carob or Chocolate sauce: Make a simple vegan carob or chocolate sauce by melting together dairy-free carob or chocolate chips and coconut oil. Drizzle it over your waffles for a decadent treat.
  • Coconut yogurt: Spoon some coconut yogurt on top of your fluffy vegan waffles for a creamy and tangy topping.
  • Chopped nuts: Sprinkle some chopped nuts, like walnuts or pecans, over your waffles for a crunchy texture and nutty flavor.
  • Jam or jelly: Spread some fruit jam or jelly on your waffles for a sweet and fruity topping.
  • Vegan ice cream: Serve your fluffy vegan waffles with a scoop of vegan ice cream for a delicious dessert or special breakfast treat.
  • Savory toppings: If you prefer your waffles on the savory side, try topping them with vegan cheese, avocado slices, sliced tomatoes, or sautéed mushrooms.

Description

This is the lightest, fluffiest vegan waffle recipe and its super simple to make. I love that it’s packed with healthy, nourishing ingredients and that they taste as good as they look!

Ingredients

Scale
  • 1 1/4 cup vegan milk (I use organic almond milk)
  • 1 tablespoon fresh lemon juice
  • 1 cup all purpose flour
  • 1/2 cup spelt flour
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cardamom (optional)
  • 1/3 cup aquafaba liquid (see note below)
  • 1/2 teaspoon fresh lemon juice
  • 3 tablespoons organic cane sugar
  • 1 teaspoon vanilla

Instructions

  1. In a jar combine milk and 1 tablespoon of lemon juice.  Set aside to curdle.  (5 min. or so)
  2. In a bowl, sift and combine all dry ingredients; flour, spelt flour, salt.  Set aside.
  3. In a separate bowl whip (with a hand mixer) the aquafaba and 1/2 teaspoon of lemon juice until fluffy, then add the sugar and whip until really fluffy.
  4. Heat waffle iron.
  5. Combine the dry ingredients with the milk mixture.  Add 1 teaspoon vanilla.
  6. Very gently fold in the whipped aquafaba, being very careful not to over mix, but fold until combined.
  7. Bake the waffles in a waffle iron.

Notes

  • Aquafaba is the liquid from cooked garbanzo beans.  By whipping the liquid we will get a fluffier waffle.
  • Add a pinch of salt to aquafaba while mixing, to increase the fluffiness.
