Summer Fruit Salad with a Lime Mint Dressing
There is nothing quite as beautiful as a summer fruit salad, and on these hot July days, it is absolutely perfect. The vibrant colors and sweet flavors are just an excellent addition to any meal. One of our favorite fruits this time of year, besides berries, is watermelon. The pink and green color, the sweet watery content, refreshing taste, besides being incredibly fun to eat, is the base of this wonderful fruit salad. We have combined our favorite summer fruits for this stunning summer fruit salad with a lime mint dressing.
Just a Simple Fruit Salad?
You might be tempted to think this is just a simple fruit salad, but think again, the dressing takes this salad to another level. We sometimes make this dressing creamy, and other times, we make it citric. See the recipe for details. Either way, it is a phenomenal dressing for this summer fruit salad. The lime is an addition that goes very well with watermelon, and the minced mint gives a wonderful flavor.
Growing Mint in New England:
We grow mint in our garden. It is one of those things that grow like weeds in New England. We hardly have to do anything to it, it comes back year after year, and provides us with a whole bunch of wonderful green leafy flavor.
Adding Nutrients Into Our Diet:
It is interesting that all the different colors in fruits and vegetables have different nutritional values, so it is essential to eat a variety of different colors in both fruits and vegetables. Making a fruit salad is a wonderful way to get a variety of nutrients into your diet. You can even top it off with some nuts for some extra crunch and protein.
When making a fruit salad, be creative. Cut some fruit in circles, some in squares, some in rectangles for a more interesting look.

Ingredients
- Fruit Salad:
- 3 cups Watermelon balls
- 1 cup Honeydew melon balls
- 1/2 cup fresh strawberries, quartered
- 1/2 cup fresh blueberries
- Dressing:
- 1 tablespoon maple syrup
- 2 tablespoons lime juice
- 1 teaspoon lime zest
- 1 tablespoon minced mint
- 3 tablespoons canned coconut milk for a creamy dressing or 3 tablespoons Orange Juice for a citric dressing
Instructions
Use a melon baller scoop to prepare the melons. Place in a medium size bowl. Quarter the strawberries, and sprinkle the blueberries on top.
Set aside.
Dressing:
In a jar add all ingredients and stir/shake to combine. Pour over fruit salad right before serving.
