Grilled Peaches with Vegan Peach Ice Cream Served on a White Plate

If there ever was a recipe to get excited about, this is the one.  Today we are making Grilled Peaches with Vegan Peach Ice Cream. This recipe is sure to make some very happy people around your house, I know from personal experience.  There is something about the grilled fruit’s warmth and flavor, combined with the cold delicious vegan peach ice cream that hit all the right notes for me.  It’s simply amazing.  Top it off with a little maple syrup and some toasted almonds, and you’ve got yourself a real winner.

I grilled peaches for the first time this year. I had heard of grilled peaches before, but had never really had the opportunity to try them, so when Peach Season arrived in New Hampshire, I headed for one of my favorite New England Orchards determined to try a few new things.   With a car full of peaches, I set my course for home and started experimenting.  This recipe is one of several recipes that came out of this year’s peach harvest.

Preserving Fresh Peaches:

Nothing is quite like getting out in the fresh air and sunshine to stock up on fruit that we can enjoy all winter long.  Fresh peaches are the best.  When they come ripe from the tree, its sweetness and flavor cannot be imagined but must be experienced.  Peaches are delicate and spoil quickly, so once you have enjoyed as many as you are able to eat fresh, it’s important to preserve them as quickly as possible. We preserve most of the peaches by canning, but also freeze a few.  Who else likes to can peaches?  I find it incredibly satisfying to preserve the fresh summer taste of peaches in jars for those cold winter months ahead.

Some of you have been asking what ice cream maker I use. My family and I have used this Cuisinart ice cream machine for years. It works beautifully for this recipe.

Vegan Peach Ice Cream

Ingredients

Scale
  • 1 can peaches (15 oz) (remove liquid)
  • 1 can full fat coconut milk
  • 1/4 teaspoon vanilla
  • pinch of salt
  • 1/4 cup maple syrup

Instructions

  • Blend all the ingredients in a blender until smooth
  • Next, pour mixture into an ice-cream maker and let run for about 20-30 minutes
  • While the ice cream maker is running, grill the peaches

Grilled Peaches

Ingredients

Scale
  • 23 large fresh peaches, cut in half
  • 1 tablespoon oil (I use coconut oil)

Instructions

  • Wash and half the peaches
  • Remove the pit
  • Brush each half with oil
  • Grill for about 4 minutes flat side down, turn and grill for another 2-3 minutes on the other side

Serving suggestion:

Serve with toasted almonds and a drizzle of maple syrup

Toasted Almonds:

  • Preheat oven to 350F
  • Place whole almonds on a baking sheet and toast for about 10 minutes
  • Let cool
  • Chop to desired size
  • Sprinkle over dessert

Notes

In this recipe I used white peaches. The flavor is amazing, but the white peaches are not as good for canning. It will work just as well with yellow peaches.
