Quick & Easy Chickpea Salad
This is such a wonderful salad. It is perfect for a quick lunch or a unique side dish. It is simple and easy to make, and is packed full of nutrients and protein. This would be a great addition to any meal.
3 cups chickpeas, drained (2 cans)
1/2 small red onion, finely chopped
1 red pepper, finely chopped
1 zucchini, finely chopped
1 can green olives
1/4 cup fresh parsley, chopped
1/8 cup fresh dill, minced
1 garlic clove, minced or crushed
1/4 cup lemon juice, fresh
1 teaspoon sea salt
1 teaspoon tahini
1 teaspoon agave nectar
1/2 cup olive oil
Prepare all the ingredients for the salad. Add to a large bowl.
Prepare the dressing, by adding all the ingredients into a small bowl, except oil. Stir. Add oil while whisking continually until emulsified.
When ready to serve, add dressing to salad. Stir to combine.
