Red onion: I suggest using a red onion, but a white onion will work as well.
Red pepper: Red pepper adds a nice crunch and burst of flavor to this recipe.
Zucchini: Zucchini also adds a crunch and additional nutrients.
Green Olives: Green olives are one of my favorite additions to this chickpea salad recipe. You can also use black olives or kalamata olives.
Parsley and Dill: Always use fresh parsley and dill if available, it has a bolder flavor than the dried spice version.

This is such a wonderful salad.  It is perfect for a quick lunch or a unique side dish.  It is simple and easy to make, and is packed full of nutrients and protein.


  • 3 cups chickpeas, drained (2 cans)
  • 1/2 small red onion, finely chopped
  • 1 red pepper, finely chopped
  • 1 zucchini, finely chopped
  • 1 can green olives
  • 1/4 cup fresh parsley, chopped
  • 1/8 cup fresh dill, minced


  • 1 garlic clove, minced or crushed
  • 1/4 cup fresh lemon juice
1 teaspoon sea salt
1 teaspoon tahini
  • 1 teaspoon agave nectar
  • 1/2 cup olive oil


  1. Prepare all the ingredients for the salad. Add to a large bowl.
  2. Prepare the dressing, by adding all the ingredients into a small bowl, except oil. Stir and slowly add the oil while whisking continually until emulsified.
  3. When ready to serve, add dressing to salad. Stir to combine.
