What’s the Secret to “Fluffy” Vegan Pancakes?

Here are my secrets to the fluffiest vegan pancakes:

  • Lemon Juice: Adding a little bit of lemon juice to the milk and letting it sit for a few minutes curdles the milk and creates a lightness to your pancake batter.
  • Don’t overmix: One of my top tips for super fluffy pancakes is to be careful with overmixing the pancake batter. Mix the wet and dry ingredients until they are combined, and do not worry if the batter has lumps. Lumps are good for fluffy vegan pancakes.
  • Cook Right Away: Leaving the batter for a while before cooking the pancakes can cause the batter to deflate. It is better to wait to mix the wet and dry mixtures until you are ready to cook the pancakes.
  • Cook over Medium-High Heat: Ensure the pan is hot before adding the batter. This makes the pancakes puff up when they hit the pan. To make sure the pan is hot enough, sprinkle a couple of drops of water on the heating pan; if they sizzle, your pan is hot enough to cook pancakes.
  • Flip Only Once: Waiting for the pancake to become a light golden brown before flipping also helps the pancake stay fluffy. I look for the bubbles to pop all over the pancake and then, using a spatula, slightly pull up one of the edges to take a peek. If it looks beautifully golden brown, you are ready to flip them. Cook on the other side and serve.

What is the best substitute for Eggs in Pancakes?

The combination of applesauce and ground golden flaxseed is my favorite substitute for eggs in pancakes.

Applesauce adds moisture and helps bind the pancake. Plus, applesauce has a mild flavor, so you will probably not notice the taste in the recipe.

Golden flaxseed also acts as a binder in this pancake recipe. I prefer the golden flaxseed rather than the brown flax seeds in my pancake batter as they are not as visible. Flax seeds also provide fiber and omega-3.

How to Make Vegan Silver Dollar Pancakes:

Step one:

  • In a small bowl, mix almond milk and fresh lemon juice.
  • Let sit for 15 minutes until curdled.
  • Add the vanilla extract.

Step two:

  • In a medium-size bowl, sift the flour. 
  • Next, add sugar, salt, baking powder, and ground flaxseed, and mix to combine.

Step three:

  • Make a well in the middle of the flour mixture and pour the wet ingredients into the center.
  • Add the melted coconut oil and mix until just combined. Do not overmix. It should be lumpy.

Step four:

  • Heat a skillet until a drop of water sizzles when dropped on it.
  • Transfer the pancake batter to a piping bag or if not available, spoon small rounds of batter (2 inches in diameter) to make cute little pancakes. Cook the pancakes till golden brown on each side.

Step five:

  • Serve with your favorite topping.

There are a couple of ways that you can make vegan silver dollar pancakes.

Small Ladle Method:

You can simply use a small ladle or spoon and make tiny pancakes (about 2 inches in diameter).

Piper Bag Method:

My favorite method is to use a piping bag. This ensures all the pancakes are uniform and equal in size. It is also super fast, and you can make a whole bunch of pancakes at record speed. Simply add your pancake batter to a piping bag and pipe the little rounds on your skillet.

Pancake Add-Ins:

Here are some fun add-ins and pancake variations:

  • Berries: Add your favorite berries such as blueberries, raspberries, or strawberries. Because of the pancake’s small size, adding the berries to the top while it is on the skillet seems to work better.
  • Fruit: Bananas, nuts, or chopped apples can spice up these little beauties.
  • Nuts: Walnuts, pecans, or your favorite chopped nuts will add a nice crunch to the pancakes.
  • Carob or Chocolate Chips: A classic favorite is to add carob or chocolate chips to the pancakes for some extra pizzazz.
