Naturally Gluten-Free Waffles That Taste Amazing? Sign Me Up!

I first tried these light and fluffy waffles while visiting my aunt and grandma in Norway. Traditionally Norwegians make waffles for afternoon and evening treats, but my aunt made waffles for breakfast. To make them healthy, she made them with oats, and the inspiration for this recipe was born!

Ingredient Notes

  • Oats: I prefer using quick oats, but I’ve had readers leave comments saying that this recipe worked fine for them using old-fashioned oats too. To keep this vegan oat waffle recipe gluten-free, sub in gluten-free oats.
  • Almond milk: Unsweetened almond milk is a wonderful milk substitute that’s comparable to cow’s milk in both protein and mineral content. Oat milk may also be used.
  • Vanilla Bean Paste: There’s something about the vanilla seeds in my favorite vanilla bean paste that adds to the waffle experience. You can, of course, use regular vanilla extract also.
  • Cardamom: Gives the waffles a wonderfully rich and comforting flavor, and to me, it is associated with Norwegian baked goods.
  • Sweetener: You can make these waffles without any sweetener, but I like to add a tablespoon of pure maple syrup. You can get creative and add 1-2 pitted dates for a healthier alternative or some agave or natural cane sugar if that is more to your liking.
  • Oil: I recommend melted coconut oil or olive oil.

How to Make Oat Waffles

Whip up a batch for a quick weekday breakfast or a fun family brunch. It takes only minutes to prepare this healthy and delicious breakfast!

  1. Blend the ingredients. You’ll need a high-powered blender for this recipe to fully break down the oats and create a smooth batter.
  2. Transfer the batter to a bowl. The batter thickens as it sits, so it can be hard to clean the blender if it sits too long.
  3. Cook until golden. If using a non-stick waffle iron, cook the waffles for about 6-7 minutes. Since this is an oat-based batter, the waffles will take a little longer to cook than other waffle recipes. If using an older waffle iron, spray the waffle iron with a bit of oil to make sure the waffles do not stick to the iron.
  4. Keep the waffles warm in the oven. Transfer the cooked waffles to a rimmed baking sheet and place in a 200ºF oven to keep warm while you finish making the rest of the batch.

Chef Tip: I have a heart-shaped waffle iron that I love, but you can use any regular waffle iron. (They have discontinued the waffle maker that we have, but I found something similar on Amazon).

Topping Ideas

  • Maple syrup: Growing up in New Hampshire, it is an absolute must to pour warm maple syrup over fresh waffles.
  • Fresh fruit: Add a fresh pop of color to your breakfast with some fresh strawberries, blueberries, bananas, or peaches. The fresh fruit will add a lovely nutritious component to you oat waffles.
  • Homemade Jam: You can’t go wrong with topping these waffles with some fresh jam. Check out my raspberry, strawberry, and blueberry jam recipes. Apple butter would also be delish here!
  • Pear Cream: Looking for a delicious sauce to pour over your waffles? Dreamy, creamy, pear cream is the way to go! This light and delicious sauce will elevate your breakfast experience to another level.
  • Berry Sauce: I love to serve my waffles with a colorful berry sauce. You can use either fresh or frozen berries to create a flavor popping complement to this breakfast.

  • Savory option: Skip the sweetener in this recipe and add some fresh herbs and a touch of lemon to create a savory option. Serve with guacamole recipe and fresh salsa.

These oat waffles are unbelievably delicious. Super easy, super healthy, super tasty, and one of my favorite breakfast foods! 


Ingredients

Scale
  • 2 1/4 cups unsweetened almond milk
  • 2 cups quick oats (for a gluten-free option use GF oats)
  • 1 tablespoon oil (olive or coconut oil)
  • 1 tablespoon maple syrup (agave or sugar)
  • 1 1/2 teaspoons vanilla bean paste or vanilla extract
  • 3/4 teaspoon salt
  • 1/4 teaspoon ground cardamom

Instructions

  1. Preheat your waffle iron.
  2. Add the milk to a blender. Next, add all the remaining ingredients; oats, oil, maple syrup, vanilla, salt, and cardamom. Blend until smooth.  
  3. Spray or brush the waffle iron with oil.  
  4. Pour about 1/2-3/4 cup batter into the waffle iron.  Cook the waffles well.  For my waffle iron, I cook them through 2 beeps before I open the waffle iron.  You may have to experiment a little with your particular waffle iron.  If you like crispy waffles, cool them on a cooling rack, or store them in the oven at low heat while you cook up the rest.  If you want your waffle soft, stack them on top of each other.  
  5. Serve with your favorite topping.  I can recommend blueberry sauce or raspberry jam.

Notes

These waffles freeze beautifully. Make sure they have cooled completely, then place in a freezer bag and freeze for up to 3 months. To reheat, pop the oat waffles in a toaster, and you will have easy, delicious waffles for days to come.
